Listed under the effects of "Vitality" on http://www.rinkworks.com/refuge/help/attributes.shtml :

* How often paralysis may be avoided by attacks from certain monsters.

The other things on this thread are also correct. A high AC prevents you from getting hit as often; a high vitality makes successful hits less likely to paralyze you. If you can't get the AC for your rogue up any higher, max out his vitality.
