Personally, I prefer Willette chili. She is famous in this area for several dishes, but her chili gets most of the attention. She uses ground chuck which she "washes." I'm not sure what that means, but somewhere in the process, it lowers the fat content. She also uses fresh tomatoes and onions and stuff from the garden.

The choice of beans in not a big deal, but I like black bean chili.

Did you know that chili freezes well? She makes big batches for the freezer and pulls it out for quick meals. She serves it with wholewheat crackers, a blob of low-fat sour cream and grated chedar. It's not too hot, but hot enough, and for those who want smoke from their ears, there is always that bottle of hot stuff. I never touch that.

Another chili trick is to serve it in a bowl with spaghetti in the bottom. Darn! Now I'm hungry.
