I too like my chili 'white hot', though I miss the kidney beans a bit. My favorite thing about white chili, other than its deceptively strong spiciness, is that it's already got a bunch of melted cheese in it.

For red chili, no peppers please; just the meat, spices and beans. I've never had beanless chili outside of the premade stuff you nuke in the microwave and then put on a hot dog, and I didn't like that very much.
