There are two good ways to determine what spell to use.

One is to View Spells, Show Details and see what does the most damage. Of course, some monsters are resistant to either heat, cold or poison, so most numerical damage isn't always the best way to go.

The second way is just to see what works best. You might want to use Sorcerer spell 21, if it works well, but it doesn't work on some monsters. Also, Fire Dragons will be resistant to fire spells, and so on. Certain higher Sorcerer spells that you're on the verge of learning will be very useful for dragons and other strong enemies.

Try to take out the largest group of breathers first, and then work on the others. A bunch of dead dragons does less damage than three bunches of wounded ones. I find that it's often useful to inflict two group-damage spells on the same group of monsters, just to make sure it's dead.

Don't forget that a fast swordsman can take out many monsters at once. That might be useful for wiping out a medium-sized group of breathers, or topping up an almost-strong-enough spell.
