Assassins don't pick up AC too quickly either, so you'd have to make the switch early on. Otherwise you'll be duplicating levels, and you won't gain any significant HP till your Assassin gets up to the level your Knight was at before. Just think how long it'll take to level back up to 200 or so, even deep in the dungeon. And you have to start at Perinn by construction, so it'll be all the more frustrating.

I suggest going to Assassin as soon as possible.
