I personally don't see all that much use in having a Sorcerer-Knight. I make my knights strong and fast enough that they have little need for Sorcerer-type attack spells. I'd rather have a Wizard-Knight who can save all his SP for healing spells between battles.

That being said, you may as well retrain as soon as you have all the spells and SP you want from your old class. Druids in particular need a long time (23+ levels) to learn both spell lists. However, don't retrain two guys at once unless the rest of the party can carry them till they can level up. This is of particular importance in the vicinity of Teralt, where monsters are surprisingly strong and resurrection costs a pretty penny.
