I think it depends on whereabouts in India the recipe comes from. In the predominantly Hindu areas, obviously they don't cook a lot of beef. The North East of the country, however, is heavily muslim, and probably eats more beef than pork.

Having said that, in most Indian restaurants in England (and the couple I've tried in America), they tend to bow to the local culinary styles and often offer beef dishes.
