Like so many things in my life, this has turned out to be very educational. My wife hit a couple of book stores and got a bunch of stuff on sugar free foods and diabetes. She seems to be enjoying the challenge of cooking things that are safe for me to eat. I thought is was as simple as avoiding sugar, but lots of other foods change to sugar when they are digested. I have always preferred brown rice, whole wheat bread and even whole wheat pasta. And then I found that unprocessed grain is better for me than the processed kind. I guess I eat healthy, and I always did with one big, fat, sweet, exception; I've always been a dessert junkie.

I had a Rubin sandwich today at Dollywood. I hope I'll find that it hasn't upped my sugar level.
