They did appear in The Phantom Menace. In the Council of the Republic, you could clearly see the ambassadors from Kashyyyk. Rumour has it that one of this ambassadors was Chewie himself.

I was rather upset that wookies didn't appear in Attack of the Clones, and I spent much of my second viewing looking for them, without success.

On the other end of the question, what has happened to all the dugs and gungans by A New Hope?
