I don't think it's such a big deal to not have a Druid. The first time I made a Druid, I sort of almost felt I had to, because the game had them. If you look at the characters from my first game, you'll notice that two of my casters were Sorcerers, one of whom had been a Wizard. Druids are notoriously hard to equip, till you find the Items of Druidity. Even then, it takes them forever to get to the same AC as a Wizard, and they can't use the best range weapons.
Doing it without an Assassin might be a bit more of an inconvenience, though it's certainly no big deal to fight with two Knights and a Rogue. Gluon is currently strong enough to demolish nine of anything with one hit, and Photon (my Rogue) can kill anything except roughly one Royal Escort out of each group.
I think the ideal party with no Assassins would have two Knights, a Rogue and three Wizards who know Sorcerer spells. Perhaps you could even replace the Rogue with a Knight, once you have DISARM. With three (possibly six) casters, it's no big deal to burn 4 SP on each chest.
