I assume it's based on what you kill and not what runs away, but is it linear based on how many monsters you fight, e.g. 2 Fire Dragons = twice the experience of 1 Fire Dragon? Does it depend on how many members in your party? Does it depend on how the monsters are grouped, e.g. 1. 1 Fire Dragon, 2. 1 Fire Dragon > 2 Fire Dragons ?

Each monster is worth a fixed number of experience points. At the end, those experience points are divvied up amongst your characters. Hence, a party of two will gain three times the experience per encounter that a party of six will gain. You're right that monsters that run away don't count toward experience.
