here's how I did it.
I made a map of one level at a time, and labeled the entrances, and exits.
So, for instance, the top level, the white sandstone, I mapped out al the places you could go from there, and if it took you down from white to yellow, I marked that pathway "A" and then made a different area somewhere else that began with a path marked "A" and went aroudn like that, marking every single way to move up and down, including the holes in the floor.
I got up to letter M, I think. Maybe it was only L. Don't really remember. so, don't make one big map, make a lot of little maps, with labels for the pathways that connect them.
